When it comes to healthy eating, one of the most common issues that people seek advice or tips about is how to eat more vegetables. This list is for you if you’re stuck for ideas! Here are 20 more exciting ways to incorporate vegetables into your diet than a simple salad.
1. Smoothies:
Blend into smoothies.
Smoothies are a great way to start the day or as a snack.
Some of my personal favorites include incorporating a handful of spinach into a topical smoothie with mangos and peaches, or substituting frozen cauliflower chunks for ice in a berry smoothie. Green smoothies, in particular, are popular for concealing a multitude of leafy greens in fruity packages.

2: Omlette:
Omelettes are a quick and easy way to incorporate more vegetables into your diet. In addition, eggs are high in nutrients. Any type of vegetable tastes great in omelets, and you can pack a lot of nutrition into them. Common ingredients include spinach, onions, scallions, mushrooms, and bell peppers.
3. Soup:
Soups are the best way to use up all left over vegetables In your fridge, particularly tidying up the vegetable drawer. Throw almost any vegetables into a pot with some seasonings, and pasta or rice, and it always makes for a cozy and nutritious meal.
4. Swap Carbs for Veggies:
Swap out bread buns for lettuce wrap or veggie bun, using lettuce as a wrap or specific vegetables as buns instead of tortillas and bread is a simple way to eat more vegetables. Lettuce wraps can be used in a variety of dishes, but they are most commonly used to make low carb sandwiches and bunless burgers.
5. Fill your plate with greens:
When serving carbs and protein, such as pasta and meatballs, add some extra vegetables (such as spinach and mushrooms) to the dish. They’ll provide more nutritional value than a traditional side salad.
6. Substitute vegetables for meat:
Grill veggie kebabs, pack a lot of flavor on a stick that’s perfect for a party. To make them, loop chopped vegetables onto skewers and cook on a grill or barbecue.

7. Mac & Cheese with a twist:
It’s a crowd-pleaser! When you get a craving for this creamy dish, give it a mature (and healthy) makeover by incorporating spinach, tomatoes, peas, or broccoli.
8. Green Inspired Scrambled Eggs:
Add minced broccoli to scrambled eggs. This vegetable addition has no effect on the texture of the eggs. It also contains an entire serving of green vegetables.

Veggie burgers are a simple substitute for heavier meat burgers and can be topped with additional vegetables. Vegetables, eggs, nuts or nut flours, and seasonings can be combined to make veggie burger patties. Sweet potatoes and black beans are also frequently used in the preparation of veggie burgers.

Stuffed bell peppers are made by stuffing halved bell peppers with cooked meat, beans, rice, and seasonings and baking them.You can boost the nutritional value of stuffed bell peppers by adding more vegetables.

Replace the traditional chicken-and-cheese combination with vegetables such as corn, red and green peppers, onions, and spinach. For added fiber, try adding some black beans. Feel free to add chicken or beef to up your protein levels!

Who said that only dipped potatoes in oil make good fries? Slice up some zucchini, avocado, carrots, or green beans. Lightly bread or roll them in cornstarch and cornmeal and bake (not fry!) until crispy.

Vegetable noodles are a quick and easy alternative to pasta noodles! It’s an easy method to incorporate more vegetables into your diet. They’re also a great low-carb option for high-carb items like pasta! You can make vegetable noodles by: shredding them, slicing with a mandoline or simply anyway you chose to!
